What is Brown Butter and how to use it?

Brown butter is melted butter with a golden color and brown specks. To make it, you melt butter in a saucepan over low-medium heat until it turns into a smooth brown sauce. The milk solids turn brown and fall to the bottom of the pan. Brown butter is a French sauce used in commercial kitchens and served with warm bread. It has a nutty flavor and can turn an ordinary dish into haute cuisine.

You can use brown butter in savory and sweet dishes to elevate the flavors. It works especially well with warm dishes like ravioli, meat, potatoes, and cooked vegetables.

What is Whipped Brown Butter?

Brown butter is a warm golden liquid form of butter. Whipped brown butter, on the other hand, is a slightly solidified, soft, spreadable version of brown butter with a whipped cream consistency. Both brown butter and whipped brown butter share the same flavour, but the latter has a creamy texture that results from being agitated via whipping. You can make whipped brown butter by whisking warm brown butter over a cold ice bowl for a few minutes until it becomes soft whipped consistency. Brown butter and whipped brown butter can be used interchangeably in cooking and baking. However, if you want to enjoy intensely nutty-flavored spreadable butter with a warm piece of bread, ‘whipped brown butter’ is a perfect choice.

Ingredients and Equipment Explained

☑️Butter: You can use either salted or unsalted butter. Personally, I prefer unsalted butter as it allows me to control the amount of salt.

☑️Salt: If you use unsalted butter, you can add salt as per your taste. Or you can sprinkle some salt on the butter just before serving the dish.

☑️Wooden spoon or spatula: You will need a spatula to stir the pan of brown butter. It helps prevent the brown milk solids from getting burnt and stuck on the bottom of the pan.

☑️Ice Water Mixing Bowl: You will place this bowl underneath the melted brown butter mixing bowl. It will help drop the temperature of the brown butter and transform it into a softly solidified whipped consistency. This bowl needs to be bigger so that a mixing bowl that contains melted brown butter can fit into it.

☑️Whisk and smaller mixing bowl: You will need a whisk and a smaller mixing bowl to mix the brown butter and salt (if you use it) together.

Ingredients

  • Unsalted or Salted Butter block (half block or a whole block)
  • Salt (optional)
  • Prepare two bowls, a larger one filled with ice and water and a smaller one that fits into the larger one.
 
 
 
 

Instructions

Brown Butter 

➊ Melt the butter on low-medium heat until it is completely melted. Swirl the pan occasionally to ensure even cooking.

➋ As the butter melts and water evaporates, it will start to foam. At this point, you need to be careful as it can quickly turn from brown to burnt. Use a spatula to stir it and prevent the brown milk solids from burning and sticking to the bottom of the pan

➌ Once you smell a nutty aroma, take the butter off the heat. This is the point when the brown butter is done.

Whipped Brown Butter

➍Transfer the melted brown butter into a heat-resistant mixing bowl.

➎ Place the brown butter bowl over the larger mixing bowl containing ice and water.

➏ Whisk the brown butter till it reaches a whipped cream consistency. 

➐ Serve the whipped brown butter in a quenelle with warm bread.

❽ Store any leftover whipped brown butter in an airtight glass jar and refrigerate it.
