Delicious Stracchiatella Recipe
I wouldn’t consider myself a regular cheese eater, but occasionally I get a craving for the creamy varieties like ricotta cheese, cream cheese, burrata, or stracciatella cheese. Some of you may be familiar with burrata cheese. The filling inside burrata cheese is called stracciatella cheese. It has a mild flavour and a stringy, creamy texture. This is what makes burrata unique: its creamy surprise inside, called stracciatella, when you cut it open.
This dish is not only rich and creamy, but also has an interesting texture and delicious flavor combinations when paired with roasted grapes and the Middle Eastern spice mix,Dukkha. Roasting red grapes is a common technique used in modern restaurants. The natural sweetness in the grapes gets intensified and the texture and flavor become very interesting. The combination of spicy chili oil is a great complement to the roasted grapes and a little stringy yet creamy Stracciatella cheese.
Ingredients Explained
āļøStracciatella Cheese or Burrata Cheese: Stracciatella cheese can be purchased from a cheese specialty store or Harris Farm if you reside in Australia.
āļøRed Grapes: Use seedless red grapes. Roast them in an oven or air fryer for about 10-15 minutes. Before roasting, mix them with a little bit of olive oil, salt, and pepper.
āļøChili oil: Chili oil is an essential ingredient that brings all the elements in the dish together perfectly. Recipe here.

āļøOlive Oil and Salt: Before roasting or air frying the red grapes, mix them with olive oil, salt, and pepper. Set the oven or air fryer to 180Ā°C (340Ā°F).

- 1/3 cup of Stracciatella CheeseĀ
- 20 Seedless Red GrapesĀ

Instructions

ā Cut the grapes in half and toss them with olive oil and salt.
ā Roast the grapes in an air fryer or oven at 180Ā°C (340Ā°F) for 10-15 minutes until they are nicely roasted. If you're using an oven for roasting, make sure to preheat it first.
PlatingĀ
ā Spread stracciatella cheese at the bottom of a bowl or glass or your chosen serving vessel.
ā Place the roasted grapes on top of the cheese.
ā Drizzle chili oil over the grapes.
