How to Make Gluten-free Buckwheat Tortillas & Wrap bread from Scratch

Create your own flatbread or wrap bread from scratch using buckwheat groats. These homemade tortilla wraps are healthy, delicious, and free from unhealthy preservatives and additives. They are super easy and quick to make, and you’ll wonder why you haven’t made them yourself yet. I promise you’ll savour every bite.

Why you will love this buckwheat tortilla wrap.

These days, you can find various types of sandwich wraps available for purchase, including plain white wraps, spinach, rye, wholegrain, and rice wraps. However, unless it is labelled gluten-free, many wrap breads still contain wheat flour as a primary ingredient. Additionally, the flavours of these wraps are often bland and too floury.

Super Easy and Quick to make
Making buckwheat wrap is easy. Simply soak buckwheat groats for 1-2 hours and blend it with some water and salt. That is all. Soaking helps the raw buckwheat groats absorb water, making it easier to grind into a soft, moist buckwheat sandwich wrap wet mix.

Rich in flavour and nutrients
Buckwheat is not related to wheat, so it is gluten-free. It is high in fibre and a good source of resistant starch, which may improve gut health. Compared to rice and wheat, buckwheat is richer in minerals. It has a mild and nutty flavour. Unlike other commercial flimsy wrap bread, this tortilla is going to be thicker and more solid. Its mildly nutty flavour will fascinate you with every bite.

Sandwich Wrap Bread using Buckwheat Groat Wraps vs. Buckwheat Flour

Buckwheat groats are the hulled seeds of the buckwheat plant while the flour is ground from the whole buckwheat kernels. I’ve made both buckwheat flatbreads and sandwich wraps using buckwheat flour and groats. Both taste amazing but have slightly different textures and appearances. Its flour wraps have a smooth surface, while the groat wraps are more rustic with visible holes. Grinding soaked buckwheat groats won’t give you the fine texture of buckwheat flour unless you use a high-powered blender like the Vita-Mix. I prefer tortilla wraps made with buckwheat groats. They are full of flavour!!

Key Ingredients to make gluten-free buckwheat tortillas

☑️Raw Buckwheat Groats
You can easily find raw buckwheat groats in supermarkets or ethnic grocery stores. Buckwheat groats are the seeds removed from their skins. They need to be soaked in water for at least 1 hour. Once soaked, they become a little slimy.

☑️Water and Salt
Water is added to blend the soaked buckwheat groats to make smooth and moist tortillas wet mix. Salt is a basic seasoning ingredient. Use a mineral salt as a basic seasoning and avoid table salt.

Buckwheat Tortilla Wraps (Gluten-free)

Ingredients

  • Raw Buckwheat Groats: 200g 
  • Water: 320g 
  • Any type of mineral salt: sprinkle to season

Instructions

1. Pre-soak raw buckwheat for at least 1 hour, then rinse and drain the water.
2. Grind the soaked buckwheat groats with 320g of water and some mineral salt to make a tortilla wet mix or batter.
3. Preheat a non-stick pan.
4. Spread the batter quickly in a round shape once the pan is hot (without oil).
5. Reduce the heat to medium to high heat.
6. Flip the tortilla over after a couple of minutes or once it is cooked
7. Cook the other side for another couple of minutes. 
8. Wrap your favourite vegetables and favourite sauces.
