I love starting my day with oat yogurt topped with a variety of colorful fruits, especially during the summer months. It’s a hassle-free wholesome breakfast that I enjoy, but during the winter, I find myself craving warmer foods. I’ve been thinking of ways to enjoy my favorite oat yogurt breakfast during the colder months, and here’s what I came up with.
Easy and quick
This recipe is easy and quick. It requires only 3 ingredients to make the crepes – egg, flour, and your choice of milk. You only need to make crepes to wrap your oat yogurt in a warm crepe.
Contrast and harmony
The interesting thing about this dish is the mix of contrasts – tangy Greek yogurt vs sweet jam and fruit, soft crepe vs crunchy chewy rolled oat, cold yogurt vs warm crepes. However, these contrasts create a harmonious blend. It feels like you are eating a delicious and healthy ice cream, but the warm crepe makes you feel warm and fuzzy.
Deliciously Sweet but healthy
Once the crepes are made, roll the oat yogurt with your favorite fruit and your choice of sweetener such as honey, maple syrup, or jam. I used homemade apricot jam. It is delicious and a great food pairing. Especially I highly recommend using jam.
Key ingredients to make breakfast crepe
☑️Crepe
Making crepes is easy. There are many different recipes for making crepes, but the main basic ingredients include oil or butter, eggs, and flour. The crepe batter should be thin and watery to create paper-thin crepe rolls. You can use plain flour or buckwheat flour.
☑️Greek Yogurt Muesli filling
You can choose your own muesli filling. I use unsweetened Greek or plain yogurt with different types of fruit, especially berries. If I also add other seasonal fruits such as apples or mangoes, I cut them into small bite-sized pieces.
☑️Sweetner (fruit jam or honey)
I’ve tried using honey or jam, and both work well. However, I really prefer fruit jam, which pairs perfectly with the slightly tangy filling from the unsweetened but healthy Greek yogurt. I highly recommend using your favorite type of jam. I used homemade apricot jam that I made with dried apricots for the crepe breakfast. It was divine!

Ingredients
- 1/2 cup of plain or buckwheat flour
- 1 egg
- 1 cup soy milk or any type of milk
- a little of salt
- 1 ts of sugar (optional)
- Oil or butter
- 1 cup of rolled oat
- 1 cup of Greek or plain yogurt
- your favourite berries or fruit
- your favourite sweetener such as jam or honey
Instructions
Combine all dry and wet crepe mix ingredients in a mixing bowl and mix well, then set it aside.
Cut your favorite fruit into small cubes or bite-sized pieces, or prepare berries. Collect all filling ingredients.
To make crepes, heat a non-stick pan or flat cooktop over medium heat. Once the pan is hot, lightly brush it with cooking oil. Spread the thin crepe mix onto the pan and cook for about a minute on each side, flipping when one side is cooked. Be careful not to burn them.
On top of an open cooked crepe, place yogurt, oats, prepared fruit, and jam or honey. Roll it like a sandwich or fold it in half.
