How to Make Crispy Vegetables with Nori Hummus

Quick and Easy
I love roasted crispy vegetables, especially in winter. But the problem is that it takes too long to roast vegetables in the oven when you want them fairly quickly! The solution is an air-fryer. It is convenient, clean and fast although it won’t replace what conventional ovens can do. For a quick roasting of vegetables, it does a perfect job in a short time.

Unique and Delicious
This recipe is my modern take on hummus. As a chef blogger and recipe writer, I love new ways of conceptualising dishes and experimenting with different flavour combinations.

Hummus is one of the amazingly clean, delicious and nutrient-dense foods I regularly enjoy. Also, it gives a lot of room for creativity. I wanted to create umami-flavoured hummus and here is what I came up with – adding umami-rich nori to creamy hummus. Such a great flavour pairing! When Asia meets the Middle East on a plate, the delicious, creamy and savoury plate is born. This is what I love about creating dishes.

Key Ingredients to make this recipe

Vegetables
Choose vegetables with a relatively low water content. For this recipe, I used Dutch carrots (baby carrots), brussels sprouts, and large green chillis. Remove the green leaves and stalks from baby carrots. Use a knife or peeler to gently scrape off the skin after cleaning and rinsing.

Brussels sprouts should have their roots removed and, depending on their size, cut in halves or quarters. Cut a small opening with a small knife or fork on the chillies to allow steam to escape. Carrots and Brussels sprouts have similar cooking times while chillis can roast relatively quickly. Make sure to add chillis later toward the end of the air frying process.

Nori
Nori is a type of dry seaweed commonly used for rolling sushi. It has a rich umami flavour with a good nutritional profile. Read here why you should eat more of this sea plant. Blend it finely in a spice mix and then mix it with soy sauce, mirin and hummus to create a delicious and unique hummus.

Hummus
Hummus is a Middle Eastern dip or spread made from chickpeas, garlic, tahini, lemon juice and olive oil. It is healthy and delicious. You can use a store-bought hummus for this recipe. If you want to make it from scratch, check out the recipe here. Once you make it your own at home, you will never seek a store-bought hummus that has lots of undesirable stuff in it. Above all, commercial hummus can’t beat freshly made homemade hummus when it comes down to flavour and wholesomeness. I highly recommend making it from scratch!

Roasted Air-fried Vegetables with Nori Hummus

Ingredients

  • Baby Dutch Carrots 1 Bunch 
  • Large Green Chilli 2-3
  • Brussels sprouts 10 pieces
  • Nori 2 sheets
  • Hummus 1/2 cup
  • Soy Sauce 1 tbs 
  • Mirin 1/2-1 tbs 
  • Olive oil
  • Salt & Pepper
  • Dukkah or 
  • Roasted Sesame Seed 

 

 

 

 

 

 

 

 

 

Instructions

1.  Clean carrots by removing the stems and leaves. Wash and peel the soiled carrot skins. Cut them lengthwise. 
2. Use a fork or small knife to make a couple of holes.  This will help steam to evaporate and make crispier chilli.
3. Clean brussels sprouts and cut into halves or quarters depending on the sizes. 

In a mixing bowl, mix all the prepared vegetables (carrots, chillies and Brussels sprouts) with olive oil, salt and pepper.  Spread the seasoned vegetables (except for chilli). Vegetables should be spread in a single layer for even cooking. 
Baby carrots and Brussels sprouts will take about 20 minutes to air fry at a temperature of 180-190 C.  Turn them over the halfway of air frying and add chilli. 

Blend 2 sheets of nori in a spice blender.  In a mixing bowl, mix hummus, soy sauce and mirin with the nori powder well. 

Spread a generous amount of nori hummus on a plate.  Then place roasted vegetables on top.   For a finishing touch, sprinkle toasted sesame seeds and salt or dukkah.

Notes

  • Add chilli toward the end of the air-frying or roasting process as they take relatively quick to cook.  
  • If you are using a conventional oven, use a temperature of 200 C to roast vegetables. 
  • Turn the vegetables over about halfway through the cooking process.
