How to Make Plum Sauce (no-cook)

This recipe for plum salsa is perfect for summer as it is a no-cook recipe. It’s made with fresh juicy black or blood plums which are plentiful during this time of year, especially in Sydney. Plums come in various colors and sizes, ranging from red, black, green, yellow, and everything in between. Some plums are sweeter than others, while some are more on the sour side, so the salsa will reflect the natural flavors of the plums themselves. However, the overall taste of the salsa is a little tangy, which can be adjusted by adding more or less vinegar. For a delicious meal, try serving the salsa with crispy potatoes and grated parmesan cheese on top.

Plum Sauce Ingredients Explained

Plum: whether red or black, are a great choice for this sauce as they bring out a beautiful color. Remove stones before blending.


Red Wine Vinegar : To make this sauce, you’ll need 2-3 tablespoons of red wine vinegar, which you can adjust depending on your taste and the type of plums you use. Other types of vinegar are okay, but in my experience, red vinegar works best as it creates a slightly tangy/acidic salsa that pairs well with dishes containing fat or oil, such as fritters and roasted potatoes.


Cashew or Pine Nuts : For nuts, feel free to use your favorite kind. I recommend cashew nuts or pine nuts as they pair well with the sauce. You can optionally roast the nuts in a preheated oven at around 165-170°C until they’re lightly toasted. Roasting time may vary depending on your oven, but it usually takes around 8-15 minutes. Let the nuts cool down before blending them with the other ingredients.


Fresh herbs: Finally, add fresh herbs like parsley, coriander, or mint to the sauce. You can use these herbs alone or mix them together to add complexity to the sauce, making it more than just a one-dimensional flavor note , instead of only adding plums.

How to Use Plum Sauce

The plum sauce has a slightly zingy flavour, which makes it a good accompaniment for salty, deep-fried, and cheese dishes. It works well as a dipping sauce or salad dressing. This sauce pairs well with sweet and savoury pancakes, savoury fritters, roasted/fried potatoes, burrata, and other cheese dishes to balance the heavier and creamier flavours. And it serves as a great addition to sweet desserts to lighten it up.

How to Make Plum Sauce (No-cook Recipe)

Ingredients

This recipe yields around 260 ml of plum salsa sauce. 

  • 2 pitted red or black plums  
  • 1 clove of garlic 
  • 2-3 tbs of red wine vinegar 
  • 1/4 cup of roasted cashew nuts or pine nuts 
  • 1/2 cup of olive oil 
  • 1/4 bunch of green herb leaves (coriander. parsley or mint) 

Instructions

  • Dry roast nuts in a preheated oven at around 170°C (8-10 mins or so).  Let them cool down.  (See more details in the blog post or Note)
  • Prepare other fresh ingredients. 
  • remove stones in plums 
  • use only green herb leaves and remove stems 
  • peel the garlics
  •  Blend all the ingredients in a blender till smooth. 

 

Notes

  • Roasting nuts are optional. 
  • Store it in an airtight container or jar in the fridge.
  • Consume within max 4-5 days.
