Why Yogurt Desserts?

When starting my blog, I wanted to create vibrant, wholesome, and delicious recipes that minimize or replace sugar, white flour, salt, highly processed carbohydrates, heavy cream, and artificial colourings. Creating another overly sweet dessert went against my belief in food and wellness. There is already an abundance of unwholesome desserts in the world. I felt a pang of guilt at the thought of simply following the trend. Instead, I was determined to craft simple, easy, and guilt-free desserts that align with my philosophy.

Yogurt became a key ingredient in many of my healthy dessert recipes, offering natural creaminess and tang without the need for excessive sugar or heavy cream. This approach allows me to create indulgent yet nourishing treats, staying true to my values.

How to Make ‘Yogurt & Charred Citrus Dessert with Balsamic Glaze’

This dessert is all about simple, flavourful elements that come together effortlessly. Brown butter and balsamic glaze are key components, elevating the dish with deep nuttiness and tangy richness. Plus, they’re versatile pantry staples that add restaurant-quality flair to everyday cooking.

I always keep both on hand—brown butter enhances sweet and savoury dishes with its toasty aroma, while balsamic glaze brings a velvety tang to any dishes such as meats, fish, salads, and desserts.

With these ready, all you need is charred seasonal citrus. Use a torch, grill, or pan to caramelize the fruit, then layer everything: a base of Greek or plain yogurt, the charred citrus, a drizzle of brown butter, and balsamic glaze. Finish with fresh mint—and voilà! Simple yet stunning dessert.

Ingredients for the Yogurt Dessert

☑️Yogurt
Use plain, unsweetened yogurt for the best results. Greek yogurt is ideal due to its thick consistency and lower water content. If using regular plain yogurt, strain it through a sieve for about 10 minutes to remove excess whey. The longer you strain, the thicker it becomes—just keep in mind this also reduces the final yield. A thick yogurt base ensures a creamy, non-watery dessert.

☑️Brown Butter
This ingredient is a game-changer, adding a deep nutty flavor and aroma that truly elevates the dessert. While optional, I highly recommend including it!

Brown butter is made by heating solid butter over medium heat, swirling it continuously until the milk solids turn golden brown and become fragrant. Remove from heat immediately to prevent burning. It adds a rich, toasty depth to sweet and savoury dishes—well worth the extra step! Check out the brown butter recipe.

☑️Citrus Fruits (Orange, Blood Orange, or Grapefruit)
Any citrus works beautifully in this dessert. Peel and slice into rounds, then char using a kitchen torch until caramelized. No torch? No problem! Use a grill pan, a hot skillet with a dash of oil, or even an air fryer. For grapefruit, you can sprinkle a little sugar before torching to balance its natural bitterness, though it’s entirely optional.

☑️Mint
Finish with a few fresh mint leaves—optional but highly recommended! They add a refreshing aroma and a hint of brightness that complements the dessert beautifully.
